I have to admit, when I first stumbled across this recipe online, I was quite skeptical. It honestly seemed far too simple to be true—how could just two basic ingredients make a delicious cookie? However, after one trial in my kitchen, I fell in love with it and wanted to share it here with you. This effortless, two-ingredient coconut banana base takes just 15 minutes to bake and serves as a versatile base for your favorite creative additions like roasted nuts, seeds, or dark chocolate. It is the perfect example of how the most straightforward ideas often lead the most impressive results for a balanced and healthy lifestyle.

They are naturally gluten-free and sugar-free, making them an excellent choice for maintaining stable energy levels. You can treat them as a creative canvas for a creative project, due to its high customization possibility. But in its basic form, the minimal ingredients mean less fuss in the kitchen and more time for what truly matters in your day.

To begin this simple process, you will need two ripe bananas—the riper they are, the sweeter your cookies will be—and 150 grams of shredded coconut. If you want to elevate the final result, you can also keep some dark chocolate nearby for a finishing drizzle.

Start by mashing your bananas in a bowl until they reach a smooth and creamy consistency. Once they are ready, pour in the shredded coconut and stir the mixture until it is fully combined into a thick dough. Using a spoon or your hands, place small rounds of the mixture onto a baking tray lined with parchment paper, then gently press them down into classic cookie shapes.

Place the tray into a preheated oven at 180°C and bake for 12 minutes until the edges start to turn golden. To ensure a perfect texture, carefully flip each cookie over and bake them for a final 3 minutes. This extra step provides a light crispness on both sides that beautifully complements the chewy center.

As a finishing touch, I highly recommend topping the cooled cookies with a drizzle of melted dark chocolate. The richness of the cocoa provides an antioxidant boost and balances the flavour of coconut and bananas.

Again you can think of this recipe as your creative canvas because the base is just the beginning. You can easily customize the dough by adding a satisfying crunch of roasted chopped hazelnuts or almonds. For those of you who are looking to add more texture and nutrients, try mixing in sunflower, pumpkin, or sesame seeds before baking. You can also transform the flavor entirely by stirring in a spoonful of raw cocoa powder or aromatic cinnamon. Doing that allows you to craft a snack that perfectly suits your mood while staying true to your holistic goals.

These cookies prove that healthy living doesn't have to be complicated. Many people also think of vegan cooking as a hard thing, and yes you can definitely find complicated recipes, but then you have also recipes like this one, which even more give you the freedom to experiment, create, and nourish your body all at once.

As a good bye let me know which customized version you would like to try, or if you prefer to keep it simple and easy?
